Ngon. Delicous.

After a few days of college cafeteria food I am craving home cooked goodness.
I was flipping through my pictures from Vietnam today and began to crave Vietnamese food!

Let me introduce you to some of my favorite meals:

Spring Rolls! These are fried with meat and veggies, and they are delicious!This is rice paper with fresh fish and veggies, dipped in fish sauce:
This is a picture of a dinner i ate at a Nhu's house. She made us sticky rice with corn, duck, spring rolls, sweet rolls, and plenty of vegetables.This is Pinocchio, my little ice cream friend :)Maybe someday I'll be able to go back and eat all this good food again. Here's to hoping!

Breakfast.

When i traveled to Vietnam this summer i discovered they ate noodle soup for breakfast. This was oh so different than my usual bowl of LIFE cereal, but I liked it.

Some girls on my team and i found a lovely little Phò place near the Làc Thuy hotel where we lived. The walk took us about three minutes, and the soup was delicious!

A few weeks after arriving in Bien Hoa, we did find a market that sold fruit loops and corn flakes! I loved eating cold cereal on hot, sticky mornings.

Now that i'm back in the states and the weather has gotten cold and snowy, I'm completely addicted to instant oatmeal. My favorite? Wal-mart's organic apples and cinnamon :)

Sometimes i mix in a few handfuls of dried cherries and walnuts to change up the flavor.

Dinner.

Ok, so I got the urge to cook dinner for the family the other night, and my mom said to make something with this goat cheese we had kicking around the refrigerator. The result?

Goat Cheese and Fresh Mushroom Crostini







And since i had some mushrooms leftover i made this:

Mushroom and Gorgonzola Fettuccine












And i made a tossed salad with lemon poppy seed vinaigrette.

Best dinner ever.
